the following recipe (care of 'vegetarian times magazine') is almost better than sleep-dreams. [please do not cringe at the tofu factor--i swear this is the best chocolate desert i have ever eaten and the tofu might as well be in the witness protection program living under the assumed identity of dairy]:Crunchy Chocolate Truffle Pie serves 12 - vegan 1 cup semi-sweet chocolate chips 1 12-oz. container firm tofu 1/2 cup pure maple syrup 1 cup creamy peanut butter (the kind that is 100% nuts) 1 9-inch pre-made graham cracker crust (optional) 1/2 chopped chocolate covered pretzels 1. place chocolate chips in microwave-safe bowl, microwave on high for 30 sec. stir chocolate, and heat 30 seconds more. repeat 'til chocolate is just melted. set aside. 2. combine tofu and syrup in food processor, and blend 3 minutes, or until smooth. add peanut butter, and process until smooth. add melted chocolate, and process once more 'til smooth. 3. pour mixture into pie crust, smoothing the top; refrigerate 20 minutes. sprinkle pretzels on top, and serve or refrigerate 'til ready to eat. in my opinion, this is great as-is in the bowl (prior to chilling) while it's the consistency of chocolate mousse.
